Quick Lamb Pita Pizza

This is a great weeknight recipe, and much healthier than a takeaway pizza.

Lamb Pizza

 

Ingredients;

  • 2 large pita breads
    • I bought the Khobs Wholemeal Lebanese Bread
  • 60 grams of baby rocket
  • 1/4 cup of pine nuts
  • 4 tablespoons greek yoghurt
  • 3 tablespoons tomato paste
  • 1 cup mozzarella cheese
  • 300 grams of lamb fillet
  • 1 fresh tomato thinly sliced
  • Dried oregano and mixed herbs
  • 1 tablespoon olive oil
  • Salt and pepper

 

Method;

  1. Preheat your oven to 180°C (fan forced)
  2. In a nonstick pan, place the pine nuts and lightly toast until they go golden brown then set aside
  3. Slice lamb into thin strips season with salt and pepper
  4. In a non stick pan, place olive oil and once hot, cook the lamb until slightly brown
    1. You don’t want to over cook the lamb as it will go into the oven
  5. Set aside and prepare the base
  6. Place pitas onto two separate baking trays
    1. I line mine with baking paper to prevent sticking, you can also use a pizza stone if you have one available
  7. Put 1 1/2 tablespoons of tomato paste on each pita and spread evenly
  8. Place the fresh tomatoes on top of both pitas
  9. Sprinkle with dried oregano and mixed herbs
    1. You can use whatever herbs you like
  10. Place the lamb, pine nuts and rocket over the two pitas evenly
  11. Lastly, top both pitas with the mozzarella cheese
  12. Place into the oven for 15 minutes, or until cheese is melted and bases are crispy
  13. Just before serving, dollop the greek yoghurt on top
  14. ENJOY !
